DTF: Cucumber Salad and Garlic String Beans
What I am craving in Spain, inspired by the restaurant Din Tai Fung.
Ingredients for the Cucumber Salad:
1 or 2 english cucumbers
2 tbsp soy sauce
1 tbsp toasted sesame oil
1 teaspoon sweet chili sauce
1 teaspoon fresh minced garlic
1/2 teaspoon salt (add a bit more at the end if needed)
1/8 teaspoon MSG
1 teaspoon chili crisp (such as lao gan ma)
1 teaspoon rice wine vinegar
Sesame seeds for garnish
Method:
Slice cucumbers into 1/2” rounds. Mix soy sauce, sesame oil, sweet chili sauce, garlic, msg, chili crisp and rice wine vinegar in a bowl. Toss with cucumbers. Cover, then let marinate in the fridge at least 20 minutes before serving.
